New Ice Cream Shop in Colorado Will Bring ‘Vintage’ Vibes
Where once was a trendy Starbucks Coffee shop, will become a "throwback to simpler times" ice cream parlor. With today's "trying" times, it will be a nice change of place to slow things down for treat.
I like to think of it as a visit to Mayberry, where everyone was generally friendly with one an other; maybe we can all start talking with a southern drawl while getting a scoop or two at this place.

Fort Collins, Colorado, Getting Vintage Ice Cream Shop in Downtown
At the corner of College Avenue and Walnut Avenue in Downtown Fort Collins is where a historic hotel used to be: The Northern Hotel. Today, the hotel is an apartment building for seniors, also known as The Northern Hotel.

In the spring of 2024, after over 20 years, Starbucks Coffee closed its location at the bottom of The Northern Hotel. Come the spring of 2025, a coffee shop will have given way to an ice cream parlor.
Edison's Ice Cream Coming to Downtown Fort Collins
A concept which seems to have been launched in October of 2024, will be taking the space vacated by Starbucks. Edison's Ice Cream, according to The Coloradoan, Edison's will be transforming the space into a vintage-style ice cream parlor.
The ice cream competition in Downtown Fort Collins is getting pretty stiff, with the legendary Walrus Ice Cream, the trendy Old Town Churn, and Glacier Ice Cream & Gelato, all close to the upcoming Edison's.
