Is This Famous Mexican Restaurant Coming to Fort Collins?
Have you heard of Los Dos Potrillos? If you have, you know that they serve some of the best Mexican food in Colorado, and if you haven't — well, get ready to learn.
According to the eatery's website, Los Dos Potrillos began as the dream of Denver local Jose Ramirez, who used all the money he had ($5.18 to be exact) to open the restaurant's first location in Centennial in 2002.
Today, the company has four Colorado locales and continues to serve "real" Mexican fare — including ceviche, steak rancheros, specialty cocktails, and more — to Centennial State residents.
So, why are we telling you this? Los Dos Potrillos might be coming to Fort Collins.
Westword reports that Jose Ramirez's sons, Daniel and Luis Ramirez, plan to expand the family's restaurant empire by opening 25 more stores.
The first part of the expansion, a fast-casual take on the original eatery called Los Dos Potrillos Cocina y Cantina, is set to launch in Northglenn by late February. A second spin-off called Los Tacos will debut near the Gaylord Rockies Resort & Convention Center in August or September.

"We want to make sure we nail this as close to perfect as possible so that we can streamline and scale at the pace we want," Daniel Ramirez told the publication.
However, the exciting news is that the Ramirez brothers are eyeing Fort Collins as another possible Los Dos Potrillos site. Nothing is finalized yet — but we can hope for the best.
